recipe // rocky road & mint treats

I år tok vi julebaksten alvorlig. 7-typer-på-en-kveld-alvorlig. Mine to søstre, vår bonussøster Marie møttes hos min tante for å gjøre noe skikkelig spetakkel. Ingefær, sjokolade, chili, marshmallows, nøtter, karamell – ingrediensene vare ville og usunne. Men hey, det er bare jul en gang i året, sant?

We decided to take this year’s christmas baking seriously. 7-kinds-in-one-night-seriously. My two sisters, our bonus-sister Marie and our aunt gathered at out aunt’s place to do some serious damage. Ginger, chocolate, chili, marshmallows, nuts, caramel – the ingredients were wild and unhealthy. But hey, christmas is only once a year, right?

Now, I’m not gonna bore you with all seven recipes, but I’m gonna let you in on the deliciousness of rocky road and mint treats. People, this is the business.

Rocky road (recipe adapted from here)
600 grams of dark chocolate // 600 gram mørk sjokolade
2 bags of dumle (a norwegian type caramels) // 2 poser dumle
2 hand fulls of marshmallows (small ones) // 2 never små marshmallows
2 dl peanuts // 2 dl peanøtter
1 dl cashews // 1 dl cashewnøtter
Skjermbilde 2012-12-11 kl. 23.52.091 Melt the chocolate on low heat in “water bath” 2. Mix all the ingredients in a bowl – cut the caramels into small pieces 3. Divide the batter in a trey so it’s 2 cm thick 4. Stick it in the fridge and let it cool completely. Divide into small squares. Eat your heart out!
Smelt sjokoladen i vannbad. Bland alle ingrediensene – del dumlekaramellen i 4 biter. Fordel røren på et brett så det er 2 cm tykt. Putt det i kjøleskapet og la det stivne. Kutt i små firkanter. Spis deg kvalm!

Mint treats
1 egg white // 1 eggehvite
10 drops of peppermint oil // 10 dråper peppermynteolje
350 grams of powdered sugar // 350 gram melis

1. Whisk the egg white and oil lightly 2. Add the powdered sugar, a little bit at a time 3. Work with the batter until it’s a firm dough 4. Roll into small balls 5. Cover with melted chocolate and allow to cool in the fridge. Enjoy!
Pisk eggehviter og oljen lett. Tilsett melisen litt og litt. Jobb med røra til det blir en fast deig. Rull i små kuler. Dypp i sjokolade og la de stå i kjøleskapet til de stivner. Enjoy!
