Hva er det en ikke kan like med tittelen på denne posten? Bananer, kanel og muffins! NAMM!

Jeg er utrolig lei av brød og havregrynsgrøt. Og i natt drømte jeg om bananbrød. Jeg drømte om bananbrød. Går det i det hele tatt an? Så når jeg våknet i dag måtte jeg gjøre to ting. Eller tre egentlig. 1. Lage noen sunne rundstykker (varme rundstykker!). 2. Handle bananer. 3. Lage noen nyyydelige banana cinnamon breakfast muffins. YES! Disse muffinsene er noen semi-sunne muffins jeg fant på Pastry Affair for en stund siden. Se her. Et viktig mål for meg i 2013 er også å spise sunt, og disse hjelper meg også å holde på det. De er bare 130 kalorier hver, så du kan faktisk spise opptil flere! Hvor konge er ikke det?

I’m ridiciolously tired of bread and oatmeal. And tonight I actually dreamed of banana bread. I dreamed about banana bread. Do people even do that? So this morning when I woke up I knew I had to do two things. Well, three really. 1. Make some healthy oat rolls (those things are tasty). 2. Go grocery shopping for bananas. 3. Make a mouth-watering batch of banana cinnamon breakfast muffins. yes, Yes, YES! Quite frankly, I couldn’t wait to get up this morning.

What are banana cinnamon breakfast muffins, you say? It’s a delicious recipe for semi-healthy muffins that I found at Pastry Affair a while ago. See here. One of my goals for 2013 is to eat healthy, and I’m doing pretty good I think. Sometimes though I get these cravings for something a little bit sweeter than whole wheat toast. And these babies give you what you need without ruining your day. At only 130 calories each, you can even eat more than one! How great is that?

This is what you need:
75 grams of butter // 75 g smør
50 grams of sugar // 50 g sukker
1 large egg // 1 stort egg
4 ripe bananas, mashed // 4 modne bananer, most
0.5 dl skim milk // 0.5 dl skummet melk
1 teaspoon vanilla extract // 1 ts vaniljeekstrakt
3 dl flour // 3 dl mel
1 teaspoon baking soda // 1 ts natron
1 teaspoon baking powder // 1 ts bakepulver
1 teaspoon cinnamon // 1 ts kanel
1/4 teaspoon nutmeg // 1/4 ts muskat

This is what you do:
Forvarm ovnen til 175 grader C. Smør en muffinsform eller sett klart muffinsformer.
I en stor bolle pisker du smør og sukker til det er lett og luftig. Tilsett egget og fortsett å piske. Bland inn de moste bananene. Hell i melken og vaniljeekstrakt.
I en separat bolle sikter du sammen mel, natron, bakepulver, kanel og muskat. Fold disse inn i den andre blandingen.
Fordel røren jevnt i de 12 muffinsformene og ha i ovnen i 15-20 minutter, eller til enn tannpirker kommer ut ren.
La det kjøle seg ned og oppbevar i en lufttett boks i romtemperatur.

Preheat oven to 350 degrees F. Lightly grease a muffin tin or line with baking cups.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the egg and continue to beat. Mix in the mashed banana. Stir in milk and vanilla extract.

In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, and nutmeg.
Fold dry ingredients into wet until just blended.

Spoon the batter evenly between the muffin cups and bake for 15 to 20 minutes, or until an inserted toothpick comes out clean. Allow to cool and store in an airtight container at room temperature.
